Here's my favorite recipe for that go-to soup for rainy or cold weather. This an old family recipe passed down to me by my parents, which I tweaked a little to my liking. One of the great things you can do with old family recipes passed down from one generation to another is the ability to put your own twist to make it your own version. This particular soup is derived from my dad's simple recipe for mussels soup, which only calls for only three main ingredients and is superb on its own. But, throughout the years, I've added a few of my own ingredients to suit my palate.
Ingredients:
-Mussels (any kind will do: black or green)
-Shrimp
-Tomatoes
-Yellow Onion
-Garlic
-Ginger
-Green Onion (for garnish)
-1 Tbsn fish sauce (optional)
-2 Tbsp of olive oil
-2-3 Tbsp of miso paste
Instructions:
-Heat soup pot
-Add olive oil
-Sautee garlic and onions
-Add ginger and sautee
-Add tomatoes and continue to sautee
-Add shrimp to the sautee, followed by the mussels
-Sautee seafood until shrimp is slightly orange
-Add 3 cups of water and bring to a simmer
-Add fish sauce
-Continue to simmer and add miso paste
-Turn off heat and add green onions
-Serve with a side of rice if desired
